I am a big fan of natural flavourings. Salt, Pepper, herbs and spices are the key. These salt blends and rubs are so easy to make and taste so delicious. Enjoy the satisfaction of bringing some ‘healthy,’ extra effort of love and taste to the table. They also make great gifts!
2 teaspoons grated lemon rind
½ teaspoon chilli powder
2 teaspoon poppy seed
1 teaspoon mustard seed
1 teaspoon celery seed
1 teaspoon grated orange rind
¼ teaspoon sesame seed
2 teaspoons ground black pepper
Dry the lemon and orange rind in the oven and then crush in a spice grinder. Leave on paper towel to ensure completely dry (or in a cool oven). Grate mustard in spice grinder and add to all other ingredients with citrus rind. Sprinkle on salads.
1 cup Himalayan salt
4 tablespoons basil
4 tablespoons parsley
2 tablespoons each of rosemary, thyme, lemon balm and prostrate savoury
Combine herbs in a blender and process. Lay out on paper towel on a baking tray and dry in a cool oven. When completely dry add to Himalayan salt. Store in a glass container. Substitute herbs of your choice. Add to any dish requesting salt.
Salt and Pepper Surprise
250g Himalayan Salt
1 teaspoon paprika
1 teaspoon dry mustard
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
½ teaspoon dried marjoram leaves
½ teaspoon thyme leaves
½ teaspoon garlic powder
½ teaspoon curry powder
Combine all ingredients, store in air tight container. Makes about 1 cup.
Salt Mixes are perfect to use in ‘Cubby Rebound Shakers’.
1 clove garlic, crushed
¼ teaspoon ground coriander seed
¼ teaspoon ground ginger
1 teaspoon ground cinnamon
¼ teaspoon ground cumin
Rub into chicken and allow to stand for at least 30 minutes before cooking.
Also delicious as a seasoning on roast vegetables.
